
SFINCIONE: THE DELICIOUS SICILIAN PIZZA
🧄 Ingredients (Traditional Version)
For the Dough:
- 500g soft wheat flour
- 500g durum wheat flour
- 20g salt
- 20g fresh yeast
- 500ml warm water
- 50ml olive oil
For the Sauce:
- 1kg crushed tomatoes
- 2–3 garlic cloves
- Fresh basil
- Salt and sugar to taste
- Olive oil
For the Topping:
- Anchovy fillets
- Grated caciocavallo or pecorino cheese
- Breadcrumbs
- Oregano
- Olive oil
🔥 How to Make It
- Make the Dough: Mix yeast with warm water. Combine flours, salt, and olive oil. Knead until smooth. Let rise for 1–2 hours.
- Prepare the Sauce: Sauté garlic and basil in olive oil. Add tomatoes, salt, and sugar. Simmer, then blend until smooth.
- Assemble: Roll out dough into a baking tray. Spread sauce, layer anchovies, sprinkle cheese, breadcrumbs, oregano, and drizzle olive oil.
- Bake: Preheat oven to 180°C (350°F). Bake for 30–40 minutes until golden and crisp.
