
Shrimp and Sausage Gumbo Smash or Pass!
Instructions:
1. In a large pot, heat the oil over medium heat. Whisk in the flour and stir constantly until a dark brown roux forms (about 15–20 minutes).
2. Add bell peppers, onion, celery, and garlic. Cook until soft.
3. Stir in sausage and cook until browned.
4. Add chicken stock, thyme, paprika, cayenne, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
5. Add shrimp and simmer until cooked through (5–6 minutes).
6. Stir in parsley and remove bay leaves.
7. Serve hot over white rice.
