
Slow Cooker Herb-Crusted Pork Tenderloin with Creamy Dijon and Herb Sauce
🍽️ Method:
1. Season and Sear the Pork
- Mix rosemary, thyme, garlic powder, onion powder, salt, and pepper.
- Rub the mixture all over the pork.
- Heat olive oil in a pan and sear the pork on all sides until golden brown (about 2–3 minutes per side).
2. Slow Cook
- Place the seared pork in the slow cooker.
- Add ¼ cup water or broth to keep it moist.
- Cook on low for 4–5 hours or until tender and juicy.
3. Make the Sauce
- In a small saucepan, combine sour cream, Dijon mustard, whole grain mustard, herbs, lemon juice, salt, and pepper.
- Heat gently over low heat, stirring until smooth and warm (do not boil).
4. Serve
- Slice the pork and drizzle with creamy Dijon sauce.
