Smothered Pork Chops

  1. Season and dredge Pat pork chops dry. Season with salt and pepper. Dredge lightly in flour, shaking off excess.
  2. Brown the chops Heat oil in a large skillet over medium-high heat. Brown pork chops on both sides (about 3–4 minutes per side). Remove and set aside.
  3. Make the gravy In the same skillet, add onions and cook until soft and golden. Add garlic and cook for 1 minute. Stir in 2 tbsp flour and cook for 2 minutes to form a roux.
  4. Add liquid and simmer Slowly whisk in chicken broth, Worcestershire sauce, paprika, and thyme. Bring to a simmer. Add cream if using.
  5. Smother and cook Return pork chops to the skillet. Cover and simmer on low for 30–40 minutes until chops are tender and gravy is thick.
  6. Serve hot Spoon gravy over chops and serve with mashed potatoes, rice, or cornbread.
