- Sear the pork chops: Season with salt and pepper. Heat oil in a skillet over medium-high and sear chops 4–5 minutes per side until browned. Remove and set aside.
- Caramelize onions: Add butter and onions to the pan. Cook 15–20 minutes, stirring occasionally, until golden.
- Build the gravy: Stir in garlic and thyme for 1 minute. Add flour and mix until absorbed. Pour in broth and cream, whisking until smooth.
- Simmer: Return pork chops to the pan. Reduce heat to medium-low and simmer 10–15 minutes until tender and sauce thickens.
