Sauté aromatics Heat oil in a large skillet over medium heat. Add onion, garlic, and bell pepper. Cook until soft and fragrant—about 5 minutes.
Add okra Stir in the sliced okra and cook for 5–7 minutes, stirring occasionally. This helps reduce sliminess.
Add tomatoes and seasonings Mix in the chopped tomatoes, paprika, salt, pepper, and optional cayenne. Add broth or water if needed to prevent sticking.
Simmer and smother Cover the skillet and reduce heat to low. Let it simmer for 20–30 minutes until everything is tender and flavors are melded.
Serve warm Delicious over rice, with cornbread, or as a side to grilled meats or fish.
