Soak the Beans Rinse beans and soak overnight in water. Drain before cooking.
Build the Flavor Base In a large pot, sauté chopped onion and garlic in a bit of oil or bacon fat until soft.
Simmer Low & Slow Add soaked beans, ham or bacon, salt, pepper, and water. Bring to a boil, then reduce heat and simmer uncovered for 2–3 hours until beans are tender and broth is rich.
Mash for Creaminess Lightly mash some beans against the side of the pot to thicken the broth.
Taste & Adjust Add more salt or pepper to taste. Remove any bones if using ham hock.
