- Marinate the Chicken Place chicken pieces in a bowl. Add salt, garlic powder, onion powder, buttermilk, and hot sauce. Mix well and marinate in the fridge for at least 2 hours (overnight is best).
- Prepare the Coating In a separate bowl, whisk together flour, cornstarch, paprika, salt, and pepper.
- Dredge the Chicken Remove chicken from marinade, let excess drip off. Coat each piece in the flour mixture. Shake off excess and let sit for a few minutes to help the coating stick.
- Fry to Perfection Heat oil to 325°F (163°C). Fry chicken in batches, turning occasionally, until golden brown and internal temp reaches 165°F (74°C).
- Dark meat: ~12–14 minutes
- White meat: ~8–10 minutes
- Rest and Serve Drain on paper towels, sprinkle with a touch of flaked salt, and let rest for 10 minutes before serving.
