- Boil the potatoes: In salted water until just tender, then drain and set aside.

- Sauté aromatics: In the same skillet, cook shallots and garlic for 2 mins.

- Combine: Add cooked potatoes and olives. Simmer until sauce thickens (8–10 mins).
