- 2 cans small sardines in olive oil (4 oz / 120g each)
- ΒΌ cup extra virgin olive oil (for frying)
- β cup all-purpose flour
- 2 cage-free organic eggs
- 1 tbsp chopped fresh parsley
- Sea salt & black pepper to taste
- 1 lemon (for garnish)

- Β½ cup low-fat mayonnaise
- 2 cloves garlic, minced
- 1 tsp lemon juice
- 1 tbsp extra virgin olive oil
