- Prep the sardines: Drain the sardines gently and pat dry. Be careful not to break them apart.
- Make the coating: Whisk eggs with parsley, salt, and pepper in one bowl. Place flour in another.
- Dredge: Coat each sardine first in flour, then in the egg mixture.
- Fry: Heat olive oil in a pan over medium heat. Fry sardines for about 2β3 minutes per side until golden and crispy.
- Make the aioli: Mix mayo, garlic, lemon juice, and olive oil until smooth.
- Serve: Plate the sardines with lemon wedges and a side of garlic aioli. Perfect with roasted potatoes or a crisp salad.
