  • 1 kg assorted offal (tripe, liver, heart, intestines), cleaned and chopped
  • 4 boiled eggs
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 tbsp ginger paste
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp chili powder (adjust to taste)
  • 2 fresh red chilies, sliced
  • Salt and pepper to taste
  • 1 bunch fresh parsley or coriander, chopped
  • 2 cups water or broth
  • Optional: vinegar or lemon juice for cleaning the offal
