
Spicy Offal Stew with Boiled Eggs

- Clean the offal: Rinse thoroughly with water and a splash of vinegar or lemon juice. Boil briefly to remove impurities, then drain.
- Sauté aromatics: In a large pot, heat oil. Add onion, garlic, and ginger. Cook until golden.
- Add spices: Stir in cumin, paprika, turmeric, and chili powder. Cook for 1 minute.
- Cook the meat: Add chopped offal and sliced chilies. Stir well to coat in spices.
- Simmer: Pour in water or broth. Cover and simmer for 45–60 minutes until tender.
- Add eggs: Place boiled eggs on top. Simmer for another 5 minutes to absorb flavor.
- Garnish and serve: Sprinkle with fresh parsley or coriander. Serve hot with bread or rice.
