🔥 Instructions
1. Preheat Oven
- Set oven to 400°F (200°C). Line a baking tray with parchment paper.
2. Make the Filling
- In a bowl, mix spinach, ricotta, feta/mozzarella, 1 beaten egg, salt, pepper, and nutmeg.
3. Prepare Pastry
- Cut puff pastry into squares (about 3×3 inches).
- Spoon filling into the center of each square.
- Fold corners over slightly or leave open for a rustic look.
4. Brush & Bake
- Brush tops with egg wash.
- Sprinkle with sesame or nigella seeds if desired.
- Bake for 15–20 minutes until golden and puffed.
