Sunday Roast Dinner

πŸ§‚ Ingredients (Serves 4–6)

For the roast beef:

  • 1.5 kg topside of beef
  • 1 tbsp olive oil
  • Salt & black pepper
  • Fresh rosemary (optional)

For the roast potatoes:

  • 1 kg floury potatoes (like Maris Piper)
  • 120 g duck fat or vegetable oil
  • 1 tsp Maldon salt
  • 1 tbsp fresh thyme

For the Yorkshire pudding:

  • 105 g plain flour
  • 3 medium eggs
  • 150 ml milk
  • 4 tsp lard or vegetable oil
  • Pinch of salt

For the vegetables:

  • 300 g carrots
  • 300 g tenderstem broccoli
  • 1 small cauliflower
  • 100 g strong cheddar cheese
  • 180 ml double cream
  • 1 tbsp fresh parsley

For the gravy:

  • 3 beef stock cubes
  • 720 ml hot vegetable stock
  • 2 tbsp cornstarch
  • 5 tbsp cold water
  • ΒΌ tsp gravy browning (optional)
  • Juices from the roast
