
Sunday Roast Dinner
👨🍳 Instructions
- Roast the Beef Rub beef with oil, salt, pepper, and rosemary. Roast at 180°C (350°F) for about 20 minutes per 500g for medium. Rest before slicing.
- Make the Yorkshire Pudding Mix flour, eggs, milk, and salt. Let rest. Heat lard in muffin tins until smoking, pour in batter, and bake at 220°C (425°F) for 15–20 minutes.
- Roast the Potatoes Parboil peeled potatoes for 5 minutes. Shake to roughen edges. Roast in hot duck fat with thyme and salt until golden and crispy.
- Prepare the Vegetables Steam carrots and broccoli. For cauliflower cheese: steam cauliflower, mix cream and cheddar, pour over cauliflower, and bake until bubbly.
- Make the Gravy Mix cornstarch with water. Add to hot stock and meat juices. Simmer until thickened. Add gravy browning if desired.
- Serve Everything Hot Slice beef, plate with roasties, Yorkshire pudding, veggies, and drizzle with gravy.
