
Tender Beef Pot Roast with Vegetables
🍳 Preparation Steps
- Season & Sear the Beef Rub beef with salt, pepper, and paprika. Heat olive oil in a large pot and brown the beef on all sides. Remove and set aside.
- Sauté Vegetables In the same pot, add onion, garlic, celery, carrots, and potatoes. Cook for 5–7 minutes until slightly softened.
- Deglaze & Simmer Stir in tomato paste, then pour in beef broth. Add thyme. Return beef to the pot and bring to a boil.
- Slow Cook Cover and simmer on low heat for 2.5 to 3 hours, or until the beef is tender and easily shredded.
- Serve Shred the beef slightly, spoon over vegetables, and garnish with fresh parsley.
