🍳 Preparation Steps

  1. Season & Sear the Beef Rub beef with salt, pepper, and paprika. Heat olive oil in a large pot and brown the beef on all sides. Remove and set aside.
  2. Sauté Vegetables In the same pot, add onion, garlic, celery, carrots, and potatoes. Cook for 5–7 minutes until slightly softened.
  3. Deglaze & Simmer Stir in tomato paste, then pour in beef broth. Add thyme. Return beef to the pot and bring to a boil.
  4. Slow Cook Cover and simmer on low heat for 2.5 to 3 hours, or until the beef is tender and easily shredded.
  5. Serve Shred the beef slightly, spoon over vegetables, and garnish with fresh parsley.
