
Tender Rosemary Garlic Lamb Shoulder
🔥 Instructions
- Prep the lamb
- Preheat oven to 180°C (356°F).
- Score the lamb shoulder with deep cuts.
- Rub with olive oil, salt, pepper, paprika, and chopped rosemary.
- Insert garlic slices into the cuts for deep flavor infusion.
- Roast low and slow
- Place lamb in a deep roasting pan.
- Pour wine and water/broth into the pan.
- Drizzle honey over the top for a golden crust.
- Cover tightly with foil and roast for 2 to 2½ hours.
- Finish uncovered
- Remove foil and roast for another 30 minutes to brown and caramelize.
- Baste occasionally with pan juices.
- Rest and serve
- Let the lamb rest for 15 minutes before carving.
- Serve with roasted vegetables or lemon potatoes.
