  1. Prep the lamb
    • Preheat oven to 180°C (356°F).
    • Score the lamb shoulder with deep cuts.
    • Rub with olive oil, salt, pepper, paprika, and chopped rosemary.
    • Insert garlic slices into the cuts for deep flavor infusion.
  2. Roast low and slow
    • Place lamb in a deep roasting pan.
    • Pour wine and water/broth into the pan.
    • Drizzle honey over the top for a golden crust.
    • Cover tightly with foil and roast for 2 to 2½ hours.
  3. Finish uncovered
    • Remove foil and roast for another 30 minutes to brown and caramelize.
