Vegetable Soup with Club Sandwiches

🥣 Method 

🔹 Soup:

  1. In a large pot, heat olive oil or butter.

  2. Add chopped onions and sauté until soft.

  3. Add carrots, potatoes, and optional garlic/tomatoes.

  4. Stir in lentils and spices (turmeric, salt, pepper).

  5. Add water or stock and bring to a boil.

  6. Reduce heat and simmer for 30–40 minutes until all vegetables are tender.

  7. Blend the soup with a hand blender (optional) for a creamy texture.

  8. Adjust seasoning to taste.

🔹 Club Sandwiches:

  1. Lightly toast or leave the bread untoasted.

  2. Spread mayonnaise on each slice.

  3. Layer lettuce, cheese, sliced meat, tomato, and any other ingredients you like.

  4. Stack 2–3 layers and press gently.

  5. Cut sandwiches into triangles.

  6. Secure with toothpicks if needed.
