- Prep the rabbit: Wash and disjoint the rabbit into manageable pieces.

- Fry the rabbit: Heat lard in a skillet to 360°F (180°C). Dip rabbit in batter and fry for 7 minutes per side. Lower heat to 275°F and cook until tender, turning often (about 30 minutes).
- Make the gravy: Pour off most of the fat, leaving 2 tsp in the pan. Stir in ¼ cup flour and scrape up the crispy bits. Slowly add milk, stirring constantly until thickened. Season with salt and pepper.
